Binoculars with jellyfish

This is a traditional combination of an appetizer (in the form of two vodka shots) and a starter (pigs’ trotters in aspic) prepared in the following manner:

Clean three pigs’ trotters and cook them together with 300g of lean pork. It is important not to use too much water: just enough to cover the meat in the pan. Cook for 2 hours, then add soup vegetables, 1 small onion, 2 bay leaves, 6 grains of allspice and 2 cloves of garlic. Season with salt and pepper. Cook slowly until the pork is ready. Drain the stock. Put slices of cooked carrot and cubes of meat into small containers, fill up with the stock and leave to set. Serve with horseradish, vinegar or lemon juice.
